• 4 ripe bananas
  • 1/4 mug melted salted butter (1/3 mug to make more cakey)
  • 1/2 mug sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 mug self-raising flour (1 + 1/2 mugs to make more cakey)
  • Handful porridge oats (for topping)
  • 2lb loaf tin

  1. Preheat the oven to 160°C fan and butter a 2 lb loaf tin and line with baking parchment.

  2. Mash bananas in a bowl.

  3. Pour melted butter over bananas, add sugar, egg, and vanilla. Sit well.

  4. Fold in flour gently until no dry flour remains.

  5. Pour batter into the tin, smooth the top, scatter the oats.

  6. Bake 50–55 minutes on the middle shelf of an oven. Don’t open the door until 50 minutes - then insert a knife into the top. If it comes out with no liquid batter, its’ ready.

  7. Leave it to cool for 10 minutes, then take it out of the tin and cool on a board.
